Recipe Makes 1 Waffle:
1/4 cup raw breakfast sausage (this cooks in the waffle iron just fine.)
Coconut Oil Spray
In a bowl crack the 2 eggs and whisk into the sausage. This will break the sausage into small bits so that it will cook evenly in the waffle iron.
Spray the waffle iron with Coconut Oil Spray
Pour the contents into the hot waffle iron and close. Let cook for approximately 3-4 minutes
Keep warm on a plate lined with paper towels in an oven set to 200*F
This is important if you are making several since they do "sweat" and can become soggy without this step.
We top these with unsweetened peanut butter and Lakanto Maple Syrup
